In the glass, the salmon-orange color is animated by a lively effervescence. On the nose, the aromas of candy cane sugar and, in the background, raspberry and red apple are expressed with finesse and straightforwardness. In the mouth, the sharp and lively attack is sublimated by a full and creamy foam. With an impressive bubble structure, the mouth delivers a subtle cranberry aroma. Ultimately, a precise and mineral finish follows on a fruity sensation evoking again ripe apples.

When sommeliers asked for a gourmet dining rosé, we listened.
This wine is meant to be served with a meal.

No dosing, no added sugar, just the truest embodiment of the fruit and the acidity of the terroir. With its irresistible effervescence conveying its aromatic elegance, Canonique was devised to create perfect harmony between dish and wine.

Canonique 2020 is less astringent than its predecessors due to a greater ripening of the sabrevois grapes at harvest time. Still as pleasing to the aficionados, it is also a great introduction for those newly discovering the appeal of sparkling wines. 2020 was truly a wonderful year for Canonique – a vintage we are particularly proud of.

Tasting & pairings

This is a rosé conceived for fine dining. A perfect partner to a tomato, basil, feta salad or to an olive and feta vegetarian pizza, where its freshness will enhance the acidity of the dish. Canonique is also a pearl when served alongside shellfish.

Notes from the winemaker

See-saw temperatures and spring frosts (compelling us to light fires to protect the vines) were followed by ideal summer conditions with mostly warm, dry and sunny days. Then a frost-susceptible September meant an ‘all hands on deck’ harvest as a quick succession of cold nights threatened the grapes furthest away from the wind tower. To make up for the lack of maturity of these grapes, we allowed the remaining fruit to ripen as much as possible.

When brought in from the fields, the grapes are subject to a direct pressing. Cold fermentation, on indigenous yeast and in stainless steel vats, preserve the wine’s freshness and fruity aroma. Sabrevois grapes normally bestow their vibrant color to Le Rosé but lost their pigmentation during the fermentation process, making this vintage paler than usual. The forming of bubbles during the second fermentation takes place using neutral yeast from a Champagne biodynamic vineyard and organic beet sugar. Le Rosé then matures on lees for a minimum of 15 months and is subjected to neither fining nor filtering. The lack of maturity of some grapes and the over-ripeness of others gives this vintage a unique and pleasing balance.
