The noble sparkling red

A red sparkling wine may seem unusual. However, bearing in mind grape varieties indigenous to North America were red, its creation is truly fitting and an homage to the terroir and our viticultural heritage.

The stakes are normally high regarding tannins in sparkling reds. The low tannin level of our red grape varieties, however, is perfect for producing and maintaining flawless bubbles. The frontenac grapes’ dark juices maintain their beautiful color throughout the vinification process. It results in an elegant and truly flamboyant sparkling wine.

Tasting & pairings

L’Exception is a wonderful wine to accompany a meal, especially served alongside heavily spiced sausages (chorizo, merguez), game meat or even beet salad! It inspires and welcomes complex culinary creations, but is just as well suited to antipasti or charcuterie and will also wondrously enhance dark chocolate treats.

Bearing in mind the presence of low tannin, please serve l’Exception at the recommended cool temperature.

Notes from the winemaker

When brought in from the fields, the grapes are pressed directly. Cold fermentation, on indigenous yeast and in stainless steel vats, preserve the wine’s freshness and fruity aroma. Losses of L’Exception 2018 at disgorging were assembled to the 2020 vintage. The forming of bubbles during the second fermentation takes place with neutral yeast from a Champagne biodynamic vineyard. L’Exception then matures on lees for a minimum of 18 months and is subjected to neither fining nor filtering.
