data-animation-name=\"customAnimationIn\" data-animation-duration=\"1000\" data-animation-direction=\"\" data-animation-out=\"0\"> The seed of an idea was planted early in our twenties, when we first experimented with winemaking during our science studies.\u00a0 Our respective careers as Information Security Engineer and Statistician allowed us to work in various parts of the world from Vancouver to the United Kingdom \u2013 but never far from a viticultural region to inspire us. <\/p>\n              <\/div>\n            <\/div>\n          <\/div>\n        <\/div>\n      <\/div>\n    <\/section>\n    <section class=\"u-clearfix u-section-5\" id=\"carousel_8737\">\n      <div class=\"u-clearfix u-expanded-width-lg u-expanded-width-md u-expanded-width-sm u-expanded-width-xl data-animation-name=\"customAnimationIn\" data-animation-duration=\"1000\" data-animation-out=\"0\"> Our vision took shape through meetings with like-minded winemakers employing sustainable\u00a0 methods, significant research and wide-ranging tastings: our goal would be to protect and preserve the terroir while creating high quality wines using solely organic and biodynamic techniques.\u00a0 It took 14 years for our dream to ripen and we knew we wanted our vines to take root where we had ours, in a burgeoning viticultural region where land waited to welcome our concept and labour.\u00a0 The challenge was significant but exhilarating.\u00a0 Very early on, we realised Qu\u00e9bec\u2019s Appalachian Highlands\u2019 pedology was ideal for producing sparkling wines, thanks to their climate and the soil\u2019s acidity.\u00a0 The area is also the birthplace of the organic movement in Qu\u00e9bec which made it the perfect place for our vision and our values to come to fruition. <\/p>\n              <\/div>\n            <\/div>\n          <\/div>\n        <\/div>\n      <\/div>\n    <\/section>\n    <section class=\"u-align-left u-clearfix u-section-6\" id=\"carousel_fb27\">\n      <div class=\"u-clearfix u-sheet u-sheet-1\">\n        <div class=\"u-clearfix u-expanded-width u-layout-wrap u-layout-wrap-1\">\n          <div class=\"u-layout\">\n data-animation-out=\"0\"> Ten vintages later and we are still the only Qu\u00e9bec vineyard solely producing sparkling wines.\u00a0 This first decade has been spent learning to know and truly understand our terroir and master the traditional sparkling wine methods.\u00a0 The next decade will be devoted to innovation, sustainable development and diversification. <br>\n
