In the glass, the salmon-orange color is animated by a lively effervescence. On the nose, hints of red berries, particularly that of raspberries and cranberries, are fine and direct. In the mouth, the sharp and lively attack is sublimated by a full and creamy foam. The bubbles stay remarkedly long in the mouth, with light fruity notes. The mineral finish ends with the bitterness of the cranberry.

When sommeliers asked for a gourmet dining rosé, we listened.
This wine is meant to be served with a meal.

No dosing, no added sugar, just the truest embodiment of the fruit and the acidity of the terroir. With its irresistible effervescence conveying its aromatic elegance, Canonique was devised to create perfect harmony between dish and wine.

Tasting & pairings

This is a rosé conceived for fine dining. In a tomato, basil and feta salad, its freshness will enhance the acidity of the tomato. Canonique is also a pearl when served alongside creamy scallops or a platter of Quebec fine cheeses.

Notes from the winemaker

Exceptional growing conditions in 2021 and the absence of fall frost have allowed grapes to reach a maturity level never before attained, not even in 2012.  We harvested at 1300 degrees-day, when we normally harvest at 1150 degrees-day.  The challenge of this vintage was in the winery, finding the means to capture and concentrate the energy accumulated in the field, at a scale never experienced before!

When brought in from the fields, the grapes are subject to a direct pressing. Cold fermentation, on indigenous yeast and in stainless steel vats, preserve the wine’s freshness and fruity aroma. Sabrevois grapes normally bestow their vibrant color to Le Rosé but lost their pigmentation during the fermentation process, making this vintage paler than usual. The forming of bubbles during the second fermentation takes place using neutral yeast from a Champagne biodynamic vineyard and organic beet sugar. Le Rosé then matures on lees for a minimum of 15 months and is subjected to neither fining nor filtering.
