In the glass, the ruby-red color has raspberry highlights. On the nose, notes of fresh red berries mingle with aromas of rhubarb and pomegranate. The palate is marked by the vivid acidity, typical of the Frontenac grape varieties, balanced by a creamy and silky texture thanks to the wine’s lees.

Our “pet-trad”, a fizzy wine refermented in the bottle

In 2019, the harvest was so bountiful that the juice was literally overflowing; the vats were full and we still had a surplus. There was only one solution: to bottle the Marquette that had not yet completed its fermentation period. And so, a petnat wine was born.

It was only meant to be a footnote, a « Parenthèse » in the history of our vineyard. However, this wine proved so popular that we are now on Parenthèse’s fifth vintage. It has to be said: the essence of the Marquette grapes is beautifully amplified by effervescence. The sublime bubbles enhance its vibrant fruitiness while maintaining the distinctive structure of the wine. A treat for the senses.

Notes from the winemaker

The 2023 vintage was marked by several extreme events: a winter with little snow but a few very cold nights, several traumatic spring frosts (but minimal losses) and a very very rainy summer. Fortunately, three unexpected weeks of sunny and dry weather before the harvest enabled us to reach excellent quality. 

Grapes are pressed directly as soon as they are picked, and then go through a low temperature fermentation to preserve a maximum of fruit and crispness. Following a short maceration and a first alcoholic fermentation, the base wine is mixed with a starter made of base wine and organic beet sugar, and bottled on the same day. The bubbles are formed during the second fermentation. More fizzy than sparkling, it contains twice as less pressure than our traditional methods. We do not disgorge the Parenthèse. The wine is neither fined nor filtered.

    In the glass, the color is pink, with hints of orange. On the nose, fruity notes of red berries and blood orange are the most persistent. On the palate, fresh, herbaceous aromas of lemongrass and basil emerge. The palate culminates in a slight bitterness and sustained acidity.
