In the glass, a cloudy ruby color glows with raspberry reflections. On the nose, delicate notes of cherry and raspberry are followed by delicate nuances of cranberry and hibiscus. A bitterness emerges in the attack, quickly enveloped by a foam and a persistent vivacity. The greedy mouth is underlined by a lively acidity and a light effervescence. It shines by its characteristic fruity reminiscent of sour raspberry.
Our “pettrad”, a fizzy wine refermented in the bottle
In 2019, the harvest was so bountiful that the juice was literally overflowing; the vats were full and we still had a surplus. There was only one solution: to bottle the Marquette that had not yet completed its fermentation period. And so, a petnat wine was born.
It was only meant to be a footnote, a « Parenthèse » in the history of our vineyard. However, this wine proved so popular that it since has had two more reincarnations, making 2021 its fourth vintage. It has to be said: the essence of the Marquette grapes is beautifully amplified by effervescence. The sublime bubbles enhance its vibrant fruitiness while maintaining the distinctive structure of the wine. A treat for the senses.
Tasting & pairings
Such an expressive wine, Parenthèse conjures up images of flavourful summery meals, goat cheese and deli meats. This wine is ideal as an aperitif and versatile enough to accompany an enjoyable serving of fries with home-made mayonnaise. At dessert, its notes of berries go hand in hand with a dessert of fresh berries.

Notes from the winemaker
Uncommonly cold weather in the first part of the season meant a very early blocage (blocking), which expressed itself as a lower alcohol level in the wines. Luckily, however, it did not hinder the fruit’s phenological development. Maturity was reached nonetheless, and can be noticed by the pungency of the wine. Despite 598mm of rain and somber days lending their hue to the vintage, acidity remains moderate – perhaps thanks to the maturing of the vines and to the indigenous yeasts, as they both promote a sound malolactic conversion. In short, a true bubbly vintage.
Grapes are pressed directly as soon as they are picked, and then go through a low temperautre fermentation to preserve a maximum of fruit and crispness. Following a short maceration and a first alcoholic fermentation, the base wine is mixed with a starter made of base wine and organic beet sugar, and bottled on the same day. The bubbles are formed during the second fermentation. More fizzy than sparkling, it contains twice as less pressure than our traditional methods. We do not disgorge the Parenthèse. The wine is neither fined nor filtered.
