Description

First 100% endogenous blend

We had been toying with the idea of a sparkling wine 100% endogenous to Le Domaine. We weighed the risks, took the plunge and are so proud to introduce Esquisse: our first wine created solely from components from our vineyard.

We combined vidal (52 %), acadie blanc (38 &) et st-pépin grapes (10 %) 2023 and orchestrated the fermentation exclusively from ingredients found at the vineyard. The leaven for the second fermentation was sweetened with must from frontenac gris 2024 and the added yeast was from our young 2024 wines, which allowed a natural much more unpredictable prise de mousse and created a denser lees.

Notes from the winemaker

The 2023 vintage was marked by several extreme events: a winter with little snow but a few very cold nights, several traumatic spring frosts (but minimal losses) and a very rainy summer. Fortunately, three unexpected weeks of sunny and dry weather before the harvest enabled us to harvest grapes of excellent quality.

Grapes are pressed directly as soon as they are picked, and then go through a low temperautre fermentation to preserve a maximum of fruit and crispness. After maturing a year on lees in vat, the leaven for the second fermentation was sweetened with must from frontenac gris 2024 and the added yeast was endogenous to our vineyard. This is a first dose of 100% andogenic second fermentation for Bergeville. More fizzy than sparkling, it contains twice as less pressure than our traditional methods. This wine on lees is neither fined nor filtered.
