L’Exception 2021
L’exception pairs perfectly with beef tenderloin with bordelaise sauce or with seasoned artisanal sausages. It inspires and welcomes complex culinary creations, but is just as well suited to antipasti or charcuterie and will also wondrously enhance dark chocolate treats.
Due to the presence of light tannins, this wine should be served chilled (4 °C) and then left to temper in the glass until it reaches its optimal temperature.

Composition 2022
Composition is a celebration of bubbles and food pairing. Its mineral and salty finish calls for food rich in iodine. Think oysters, scallop ceviche with lemon, mussels, roasted cauliflower or warm goat cheese toasts !

Colfo 2023
Ecologically sound, canned wine is also practical and ideal for picnics, to carry along on a walk, to pack with your fishing gear or to bring to a barbecue. Colfo is undoubtably a summer wine, in a perfect individual size (unless you want to share it, of course).

Notes from the winemaker
L’Exception 2021
When brought in from the fields, the grapes are pressed directly. Cold fermentation, on indigenous yeast and in stainless steel vats, preserve the wine’s freshness and fruity aroma. The frontenac noir having greatly benefited from warm weather, its addition was inspired at the blending stage – giving the wine a delicate spiciness and enhancing the savouring experience. The forming of bubbles during the second fermentation takes place with neutral yeast from a Champagne biodynamic vineyard. L’Exception then matures on lees for a minimum of 18 months and is subjected to neither fining nor filtering.
Composition 2022
2022 was a fresh vintage. Maturity was reached nonetheless, and can be noticed by the pungency of the wine. This vintage, due to the cold season, is the incarnation of a nordic wine – 2022 was the perfect year to craft sparkling wines!

Composition then matures on lees for a minimum of 15 months and is subjected to neither fining nor filtering.
Colfo 2023
The 2023 vintage was marked by several extreme events: a winter with little snow but a few very cold nights, several traumatic spring frosts (but minimal losses) and a very rainy summer. Fortunately, three unexpected weeks of sunny and dry weather before the harvest enabled us to harvest grapes of excellent quality.
Grapes are pressed directly as soon as they are picked, and then go through a low temperautre fermentation to preserve a maximum of fruit and crispness. Following a short maceration and a first alcoholic fermentation, the base wine is mixed with a starter made of base wine and organic beet sugar, and canned on the same day. The bubbles are formed during the second fermentation in the can. More fizzy than sparkling, it contains twice as less pressure than our traditional methods. We do not disgorge the Colfo, as it would be impossible to open the can to extract the lees and then close it again, as we do for sparkling wine in bottles. Indeed, Col Fondo, which means “with the bottom” in italian, is a reference to the lees that deposit on the bottom of the bottle (or can, in our specific case) at the end of the second fermentation. The wine is neither fined nor filtered.
