The first red Col Fondo of its kind in Quebec, made solely from grapes, without sugar or external additives. Light, dry, and natural, it embodies a colossal challenge: stabilizing a wine where the slightest mistake could have jeopardized everything. Every bubble reflects patience, science, and instinct. But it is also a victory, another milestone on our journey toward this “Holy Grail”: creating wines born solely from the vine and expressing themselves without artifice. This very special cuvée invites you to contemplate, savor, and celebrate the purity of the grape, risk transformed into beauty, and this further step toward the impossible.

Notes from the winemaker

The 2024 vintage was marked by a particularly warm and sunny season, offering us an abundance of exceptional red grapes. This red year, as we like to call it, allowed us to unleash our creativity in developing new products we’ve long dreamed of.

It’s a year that was, above all, filled with a lot of love. Love that we want more than ever to share with you, one bottle (or can) at a time:

Hand-harvested 72 tons of grapes • 108 hours of juice extraction • 40 days protecting the grapes from their natural predators • 8 days spreading and smelling the manure • 85 tank transfers • 600 hours of manual weeding with a pickaxe • 10 exceptional humans pampering the vines 7 days a week from April to November!

Grapes are pressed directly as soon as they are picked, and then go through a low temperautre fermentation to preserve a maximum of fruit and crispness.

Following alcoholic fermentation, the still wine is kept in tanks for one year. During the subsequent harvest, grape must and wine undergoing fermentation with indigenous yeasts are blended with the still wine, then bottled within hours. It is during this second fermentation in the bottle that it develops its delicate effervescence. More sparkling than fizzy, this re-fermented wine has half the pressure of our traditional-method wines. The wine is unfined and unfiltered.

This range is a playground where we allow ourselves the pleasure and freedom to explore different types of winemaking.     In the glass, the pale yellow color reveals tenacious bubbles. The nose releases aromas of apples, honey and blood oranges. On the palate, bubbles are persistent and creamy, and aromas of pears, white peaches and roasted nuts blend together. The acidity is zesty, but well-balanced by the light dosage.
