In the glass, the straw-yellow color is slightly cloudy. The expressive nose is dominated by notes of tropical fruit, popcorn and yeast. Acidity and bitterness on the palate balance very well this aromatic nose. The finish is dominated by a light, bright effervescence, and a creamy texture thanks to the lees present in the wine.

 

Description

Sharing little secrets

Le Plus Petit Que was never planned. In 2019, we were creating our first reserve wine, to be kept under low pressure in magnum bottles. This formulation was destined for future Intégrale vintages, following traditional Champagne customs to add consistency and complexity to wine composition by blending in previous vintages. When testing the final pressure in the magnum (and having a glimpse at the wine inside), our team was so enchanted by the taste that we knew this wine, just as it was, had to be shared with the outside world.

Tasting & pairings

Its remarkable thirst-quenching characteristics make the Plus Petit Que the ideal aperitif candidate and a flawless companion to calamari fritti (served with a herb and lemon dressing) or to a pear-inspired sweet course. When the sun reigns, le Plus Petit Que can elevate any garden salad. Due to its contact with lees, aromas and finish are akin to bâtonnage.

Do remember to carefully tip the bottle upside down to suspend the lees before serving. This wine is meant to be enjoyed young, in its prime, to best delight.

Notes from the winemaker

The 2023 vintage was marked by several extreme events: a winter with little snow but a few very cold nights, several traumatic spring frosts (but minimal losses) and a very rainy summer. Fortunately, three unexpected weeks of sunny and dry weather before the harvest enabled us to harvest grapes of excellent quality.

Grapes are pressed directly as soon as they are picked, and then go through a low temperature fermentation to preserve a maximum of fruit and crispness. Following a short maceration and a first alcoholic fermentation, the base wine is mixed with a starter made of base wine and organic beet sugar, and bottled on the same day. The bubbles are formed during the second fermentation. More fizzy than sparkling, it contains twice as less pressure than our traditional methods. We do not disgorge the Plus Petit Que. (Contact with the lees brings aromas and textures similar to stirring.) The wine is neither fined nor filtered.
