This wine is meant to be served with a meal.

No dosing, no added sugar, just the truest embodiment of the fruit and the acidity of the terroir. With its irresistible effervescence conveying its aromatic elegance, Canonique was devised to create perfect harmony between dish and wine.

Tasting & pairings

This is a rosé conceived for fine dining. With pizza, its freshness will enhance the acidity of the tomato. Its fresh and herbaceous aromas will also match perfectly a salmon gravlax or a tom yum Thai soup.

Notes from the winemaker

The 2023 vintage was marked by several extreme events: a winter with little snow but a few very cold nights, several traumatic spring frosts (but minimal losses) and a very rainy summer. Fortunately, three unexpected weeks of sunny and dry weather before the harvest enabled us to harvest grapes of excellent quality. This vintage, due to the cool and humid season, is the incarnation of a nordic wine – 2023 was the perfect year to craft sparkling wines!

When brought in from the fields, the grapes are subject to a direct pressing. Cold fermentation, on indigenous yeast and in stainless steel vats, preserve the wine’s freshness and fruity aroma. Sabrevois grapes normally bestow their vibrant color to Le Rosé but lost their pigmentation during the fermentation process, making this vintage paler than usual. The forming of bubbles during the second fermentation takes place using neutral yeast from a Champagne biodynamic vineyard and organic beet sugar. Le Rosé then matures on lees for a minimum of 15 months and is subjected to neither fining nor filtering.

On the palate, bubbles are persistent and creamy, and aromas of pears, white peaches and roasted nuts blend together. The acidity is zesty, but well-balanced by the light dosage.
